We love one skillet meals, especially when we can whip them up in 30 minutes or less. We also really love LiberTerre pork chops and finding new ways to cook with them. We wanted a rich sauce that would add a ton of flavour to the usual pork chop recipe. One herb that we absolutely love with pork is thyme. We infused it in a bacon cream sauce and are pretty happy with the result.
We also added a touch of wine to the cream sauce because it adds a nice flavour to the sauce. If you don’t have any white wine, feel free to substitute it with an equal amount of chicken stock. We used Liberterre pork chops for this dish because they have a great flavour, they cook up quickly, and stay juicy and tender (find LiberTerre products near you here).
This dish is easy to prepare. Watching as the cream sauce comes together, and smelling the wonderful aroma of the thyme infused in the cream is absolutely mouth-watering.

Pork Chops with Bacon, Mushroom, and Thyme Cream Sauce
Serves 4
Ingredients
1 lb LiberTerre boneless pork rib chops
5 Slices of bacon, diced
4 oz Cremini mushrooms, sliced thinly
½ Small sweet yellow onion, thinly sliced
1 Clove garlic, minced
2 Large sprigs of thyme
¼ cup White wine (or alternatively, chicken stock)
½ cup Heavy (35%) cream
Salt and pepper

Directions
- Season
Season both sides of the pork with salt and pepper and set aside.
- Cook bacon
Heat a heavy skillet over medium-high heat and cook the bacon, stirring frequently, until it is crispy and the fat has rendered (about 5 minutes). Use a slotted spoon and transfer the bacon to a paper towel-lined plate to drain.
- Cook pork chops
Add the seasoned pork chops to the skillet, turning once, until the pork is cooked through (about 2 minutes per side). Transfer the cooked pork chops to a platter and keep warm.
- Add vegetables
Add onions, garlic and mushrooms to the skillet, stirring, until soft, about 3 minutes. Stir in the white wine and cook until reduced by half.
- Stir and serve
Stir in the thyme, cream, and reserved bacon and cook until the sauce is warm throughout, about 2 minutes. Season to taste with salt and pepper. Add the pork chops into the skillet with the sauce, making sure the pork chops are surrounded by the sauce. Serve immediately with lemon wedges.
Easiest Herb Roasted Potatoes
Serves 4
Ingredients
2.5 lbs Yellow flesh potatoes (about 5 large potatoes)
3 tbsp Olive oil
1 tbsp Salt
1 tbsp Dried rosemary
1 tbsp Dried oregano
Black pepper to taste
Directions
- Preheat
Preheat the oven to 400°F.
- Mix
In a large bowl, combine the olive oil, salt, rosemary and oregano. Set aside.
- Cut and assemble
Wash and cut the potatoes into 1 inch pieces. Add the potatoes to the large bowl with the seasoning rub and toss to coat. Place the potatoes on a parchment-lined baking sheet.
- Cook
Cook the potatoes in the oven for 30 minutes, turning once at the half way point, until crispy and golden brown. Serve immediately.
