Chicken Involtini with Pesto, Prosciutto, Provolone, and Tomato Sauce
Serves 4-6
Ingredients
4 large LiberTerre chicken breast fillets (about 2 lbs)
4 tbsp Pesto
8 slices Prosciutto
8 slices Provolone cheese
1/4 cup Pine nuts (optional)
4 cups Prepared tomato sauce
Short wooden skewers or toothpicks
Directions
1. Thin the Chicken
Using a kitchen mallet or wide cleaver, pound each slice of chicken between 2 oiled pieces of waxed paper until thin but not torn, about 1/4-inch thick. Lay each piece out on a clean working surface.
2. Season
Season the chicken with salt and pepper. Divide the pesto among the 4 pieces of chicken, spreading it out thinly with a spoon. Next, divide the pine nuts among the 4 pieces of chicken, followed by a layer of prosciutto and then provolone cheese.
3. Roll
Roll the chicken up tightly and secure with toothpicks or skewers (you will only need about 2 per roll).
4. Pre-Cook
Heat an oiled skillet to medium high heat and cook the involtini in batches until golden brown and almost cooked through – about 3 minutes per side (don’t worry if they are not cooked through because they will have another opportunity to cook through in the tomato sauce.) Remove the involtini from the skillet and keep them warm while you prepare your skillet with tomato sauce.
5. Cook
Add the tomato sauce to the skillet until heated through. Add the involtini back to the skillet and nestle them into the sauce. Continue to cook until the chicken is cooked through. Remove the skewer/toothpick prior to serving. Serve hot with more tomato sauce and freshly torn basil.
