Easter is around the corner, and obviously, you’re planning to put a lot of care into an incredible holiday ham. The key, of course, is to start with really high quality protein like LiberTerre’s Spiral Sliced Ham. You can either enjoy its succulent flavour in its own glory, or try it slathered with a super simple Honey Mustard glaze (get my go-to recipe here!)

If you’re going to spend the additional time making a stunning Easter feast, I always recommend making an extra big one and planning for some leftover meals.

MONDAY: Start the week of right with a protein-packed Frittata. Season and whisk 6 eggs in a bowl, then add in 1 cup of diced leftover ham, 2 cups spinach, 1 diced roma tomato and ½ cup of cheese. Pour into a greased round 9” pie plate and bake for 25-30 minutes at 350°F until set.

TUESDAY: Tuck into a Light Pasta Carbonara. Using a spiralizer, process 3 zucchinis into pasta-like ribbons and steam until al dente in a nonstick skillet. Once tender, quickly stir in an egg yolk, a handful of parmesan cheese and a cup of diced leftover ham for a decadent tasting bowl of low carb comfort food.

WEDNESDAY: Look forward to lunch hour with gourmet Grilled Cheese. Drizzle olive oil on one side each of two slices of bread and fill it with sliced leftover ham, grated cheese and a few bread and butter pickles. Put the two halves together, and then pan fry the sandwich over medium low heat until the bread is golden brown and the cheese melts.

THURSDAY: Make family night fun with Hawaiian Quesadillas. Sprinkle a whole-wheat tortilla with grated cheese and load it up with diced pineapple, cubed leftover ham, and your favourite veggies. Top it with another tortilla and bake at 400°F until golden brown. Slice into wedges and serve with salsa and guacamole.

FRIDAY: Skip the takeout with Easy Fried Rice. Sauté leftover finely diced vegetables in a large nonstick skillet with a cup each of frozen peas and diced leftover ham. Move the ham and vegetables to one side of the skillet and scramble 3 beaten eggs in the open space. Finally, stir in ¼ tsp of soy sauce, 3 cups of leftover rice and seasoning, to taste.

SATURDAY: Make a quick Saturday night dinner with these Speedy Loaded Potatoes. Pierce a baking potato with a fork, then microwave for 15 minutes until tender. Cut each potato in half, scoop out the pulp and combine it with ¼ cup of diced leftover ham, 1 oz of grated cheese and 1 cup of steamed broccoli florets. Place the potato on a baking sheet under the broiler for 3-4 minutes, or until the potato is golden and the cheese bubbles.

SUNDAY: Whip up a hearty Split Pea & Ham Soup! Prepare a big batch of split pea or lentil soup by simmering vegetable stock, diced vegetables and your favourite dried legumes. Once cooked, add in a few cups of diced leftover ham and serve with crusty bread.
